林聰明沙鍋魚頭自1953年位於嘉義市文化路夜市創業攤車,以販賣小吃冬菜蝦仁蛋湯起家,由於林聰明的父親喜愛釣魚、熱愛廚藝,遂而賣起魚頭料理,一甲子歲月裡由林聰明傳承父親精湛手藝,將家傳美味發揚光大。
目前傳承至第三代掌門人由林佳慧接棒,孫女將阿公當年招牌的筆誤,
將砂字誤寫成「沙」字成了品牌LOGO特色,讓老店品牌創新年輕化經營,
料理仍維持傳統每日高湯熬煮十個小時以上,獨家口味用料實為臺灣百年優良老店,2019榮獲美國最大影音頻道NETFLIX亞洲飲食紀錄片遠洋專訪,推薦林聰明沙鍋魚頭為代表台灣的世界小吃。

Smart Fish was established in 1953 and the first generation of Mr. Lin has started its business as a street food vendor in Chiayi City, Wenhua Road. Smart Fish has gone through the third generation till the present time, now it is run by Grace Lin. The whole business all started from Grace’s grandfather’s hobby of his delicate cooking skills and addiction to fishing as well. Eventually, his interest brought the idea of running his food business of selling fish head cuisine. The grandfather had prosperous the smart fish business for six decades, then grandfather inherited his fish head cuisine business from his son Lin Cong Ming; Cong Ming is the original name of the second generation of Mr. Lin. More importantly, Cong Ming means SMART in Chinese. 
The Official brand name ‘Smart Fish’ was founded in the second generation. 
When the third generation Grace Lin takes over Mr. Lin’s business, she has brought the local smart fish into national, then internationalized. She has adopted the idea of making the business more organized. She even teams up with her employees; makes the Smart Fish group team as an organization and has its own culture. R&D is very important for her business strategy. When lots of F&B businesses are worried or may be corrupted by the COVID-19 epidemic period. She has turned her business upside-down into a new brand era. In 2019, Smart Fish caught attention by the international NETFLIX channel. Eventually, Smart Fish officially got into global.
